Cornish Game Hen. Delicious, right? It’s the perfect option for hosting a few people, or if you don’t want to bake a 18lb turkey for 16 hours. So much work! Hens are extremely moist and juicy, and the meat falls off the bones. Plus, hens display an amazing presentation if you want to impress guests. My husband and I love them, and they’re easy to prepare!
Cornish game hen (1 hen feeds 1-2 people depending on appetite)
Salt and Pepper to taste
Grandma’s stuffing (recipe is in my previous blog, and trust me, you want to make it)
Preheat oven to 350. If your hens are not cleaned and gutted, do so. Season the inside and outside liberally. Stuff the hens with Grandma’s Stuffing until full. Place on greased baking sheet. Bake for 1 hour, or 1 hour and 15 minutes if stuffed. Temperature should read 180 when complete, and the juice should be clear.
I love to add mixed potatoes to the pan as an easy add on, and the flavor is phenomenal!
Don’t forget to make gravy out of the drippings. Remove the hens, and potatoes. In the baking pan or in a frying pan, drain the drippings. Whisk flour in with a fork until the mixture is clumpy. At this time, add chicken stock. I use about 1-1/2 cups, or until the gravy is the desired thickness! I also ALWAYS keep bacon grease on hand to add flavor to my sauces. This is optional.
