If Thanksgiving is just for a two, this is for you! Cornish Game Hen with roast potatoes and gravy

Cornish Game Hen. Delicious, right? It’s the perfect option for hosting a few people, or if you don’t want to bake a 18lb turkey for 16 hours. So much work! Hens are extremely moist and juicy, and the meat falls off the bones. Plus, hens display an amazing presentation if you want to impress guests. My husband and I love them, and they’re easy to prepare!

Ingredients
Cornish game hen (1 hen feeds 1-2 people depending on appetite)
Salt and Pepper to taste
Basil
Garlic powder
Grandma’s stuffing (recipe is in my previous blog, and trust me, you want to make it)

Preheat oven to 350. If your hens are not cleaned and gutted, do so. Season the inside and outside liberally. Stuff the hens with Grandma’s Stuffing until full. Place on greased baking sheet. Bake for 1 hour, or 1 hour and 15 minutes if stuffed. Temperature should read 180 when complete, and the juice should be clear.

I love to add mixed potatoes to the pan as an easy add on, and the flavor is phenomenal!

Don’t forget to make gravy out of the drippings. Remove the hens, and potatoes. In the baking pan or in a frying pan, drain the drippings. Whisk flour in with a fork until the mixture is clumpy. At this time, add chicken stock. I use about 1-1/2 cups, or until the gravy is the desired thickness! I also ALWAYS keep bacon grease on hand to add flavor to my sauces. This is optional.

The best homemade stuffing you'll ever have!

Let’s be honest, homemade stuffing kicks the box stuff in the butt! Plus, this has an Italian flare. And it’s easy too!

Ingredients:
Loaf of french bread (cubed and dried for 1 hour).
1 stick of butter (or margarine, but butter gives the best flavor)
4 stalks of celery
1 small onion
1 C. chicken stock
1 TBSP italian seasoning (basil and oregano works)
2 gloves of garlic (or TBSP of minced garlic)
Salt and pepper to taste

In a large pan or dutch oven, saute onions, celery, salt and pepper on medium heat in butter until soft. Pour in bread cubes and stir. Add chicken stock to moisten. mix, mix, mix!

Chill. Use in a stuffed chicken or turkey. If preferred to cook separately, bake on 350 for 35 minutes in greased casserole dish.
